Cupcakes and Epiphanies





My friend from Chicago sent me a surprise care package that included this wonderful little notebook (the little bird is from her too). I knew I had to use it for some special kind of purpose, so I started writing activities that would make me happy in it. Now that college is winding down, I've realized that though I've learned a bunch, I've barely exercised any of my creativity. Thus, a cupcake chronicle was born. I plan to document my adventures in vegan baking, sewing, photography, and my involvement at community service sites, such as the local soup kitchen and the photo club I teach at the junior high school.

My quest to rediscover creativity began by making a yummy lunch out of the cookbook "Rabbit Food." This is a tiny cute bound zine made by beth bee. Seriously, it's really cute. It has a hard cover with really small dividers and tabs that categorize the main meals, appetizers, desserts, drinks, etc. I purchased it through herbivore, but you can also check out her website, which includes downloadable recipes! ka-ching! The thing I made for lunch was definitely not the "savory potato and tofu burritos" I originally planned on making because I'm trying to be more spontaneous and original....so i put kale in it!

For dinner I went over to Chelsea and David's house because they baked 3 10 lb. bags of potatoes! I shredded some vegan cheese (follow your heart cheddar) on my baked potato and accompanied it with a great salad that Chez made with greens from the clear creek co-op. I ended up making the dessert, which was coconut cupcakes with coconut frosting and a slice of strawberry. Sorry the picture is a little fuzzy, but I was distracted by the three wonderful dogs that live there!

Today was a good first day for a cupcake chronicle.
